Banoffee pie

When I was at the #PLBSlumberParty a couple of weeks ago, we made banoffee pie in jam jars. They looked really good and tasted even better, so I thought I would share the recipe with you.

You will need: (Makes around 6)

  • 1 pack of digestive biscuits
  • Bar of milk chocolate
  • 300ml whipping cream
  • 2 bananas
  • Jar of Bonne Maman caramel spread (or a liquid caramel alternative)
  • 6 empty jam jars
1) Whip the cream until it is thick, slice the bananas, grate the chocolate and crush the digestive biscuits (we put the biscuits in a sealed bag and crushed them with a rolling pin).

2) Put the crushed biscuits into the bottom of your jar. If you would like to keep the biscuits squished together, you can stir melted butter with them - we skipped this step as we thought we'd get enough moisture from the caramel sauce.

3) Add a layer of caramel sauce on top of the biscuit base. Don't make this too thick as your bananas will sink!

4) Add a layer of bananas, and spoon the whipped cream on top.

5) Add decorations with the grated chocolate and extra slices of banana.

6) Leave to chill for an hour before serving.

These are so easy to make and look impressive too. You could also use this recipe and make it into a large pie instead of in the individual jars. Although beware, they are very filling...

We get so worried about being pretty. Let's be pretty kind, pretty funny, pretty smart, pretty strong.
